4 lbs. boneless, skinless chicken breast, cut into tenderloin strips

Marinade
1 -1/2 c. extra virgin olive oil
1 Tbsp. crushed red pepper
2 cloves garlic, crushed
1/2 c. parmesan cheese
1/2 c. fresh parsley
pepper to taste
4 cloves garlic, minced

Amogio Sauce
1 c. olive oil
5 Tbsp. melted oil
1/4 tsp oil
2 cloves garlic
juice of 2 lemons

Directions:

Combine the ingredients for Amogio Sauce in blender. Set aside.

Cut chicken into 1x4" strips. In a large ziplock bag put marinade and chicken together. Place in refrigerator for 1 hour or longer.

Combine bread crumbs, cheese, parsley, pepper and minced garlic in a bowl and mix well. Dredge chicken in bread crumb mixture.

Take each coated strip and thread onto a skewer. roll the threaded skewers in the Amogio sauce over the skewers front and back side. Place skewers on a rack in a broiler pan.

Broil until chicken is cooked through about 10 minutes on each side. Turn frequently.

Serve chicken over cooked spaghetti and Pour Amogio sauce over the chicken. Serve also with lemon wedges.
