6 eggs, separated
⅔ cup sugar
1½ cups strong espresso, cooled
2 tablespoons Amaretto (optional)
1 pound mascarpone cheese
2 packages ladyfingers
Cocoa powder
Bittersweet chocolate shavings

Directions:
Directions:
In a large bowl, beat egg yolks and sugar until thick and pale, about 5 minutes.

Add mascarpone cheese. Beat until smooth.

Add 1 tablespoon of espresso and a little amaretto, if using. Mix until thoroughly combined.

In a separate bowl, beat egg whites and 1 teaspoon of sugar until stiff peaks form. Do not over mix.

Gently fold egg whites into mascarpone mixture and set aside.

In a shallow dish, mix remaining expresso and amaretto.

Quickly dip each ladyfinger into expresso and arrange in a single layer in the bottom of a 13"x9" glass pan.

Spread half the mascarpone mixture evenly over the ladyfingers.

Arrange another layer of soaked ladyfingers on top of the mascarpone layer and top with remaining mascarpone mixture.

Sprinkle top with cocoa powder and shaved chocolate.

Cover and refrigerate for at least 4 hours before serving.

This is one of our favorite desserts. I usually make this for Nick for his birthday.

You can substitute Kahlua or other liqueur for Amaretto.
