British pancakes (crepes) Recipe

Ingredients: 4 oz self-raising flour 1 large egg 2/3 - 1 cup milk Salt to taste
Sugar and lemon juice for fillings

Directions: |
Directions:Break egg into a mixing bowl and whisk with 2/3 cups milk.
Sift the flour then add the milk and egg mix.
Whisk until the batter is smooth and runny. Add more milk if needed.
Add salt to taste
Heat a 10 inch skillet over medium heat and melt 1/4oz - 1/3oz butter. Spread butter over skillet and wait until it starts to sizzle.
Pour approx. 1/3 cup batter into the skillet and roll the skillet around to coat the entire bottom of the skillet. Allow to cook until batter solidifies and small bubbles appear. Flip the pancake and cook another 20 - 30 seconds to brown the second side.
Slide the pancake out of the skillet onto a plate. Sprinkle a teaspoon of sugar over the pancake then add lemon juice.
Roll into a cigar shape and cut into halves (or smaller). Enjoy.
Vary filling by using Jam, Jelly or lemon curd instead of sugar and lemon. Maybe Nutella.
The filling doesn't have to be sweet, savories work well too. Use your imagination but don't be weird. Or gross. |

These are traditional English Shrove Tuesday pancakes in preparation for Lent. Also known as Mardi Gras or Fat Tuesday. They are NOT American pancakes like you get at IHOP
