8 small tortillas, usually corn but flour is also ok
8 oz smoked or roasted pork belly

Spicy Mayo:
½ c. mayo
1 T. sriracha or other hot sauce
1 T fresh lime juice
2 t. soy sauce

1 c. sliced cabbage
½ c. chopped cilantro
¼ c chopped green onion, or white onion
jalapeño slices

Directions:
Directions:
Warm tortillas in oven or microwave. Slice cooked pork belly in thin crosswise slices. Fry in skillet until edges are crisp, about 5 minutes. Drain on paper towel.
Whisk together dressing ingredients, then pour over cabbage and other veggies. Serve tortillas filled with pork belly and topped with dressed cabbage. Top with a squeeze of fresh lime!
