1½ c. flour
1 T sugar
½ t. baking powder
½ t. salt
2 c milk
½ t. vanilla
2 T. melted butter
2 eggs

Directions:
Directions:
Stir dry ingredients together in medium bowl. Stir in remaining ingredients, beat well with mixer until batter is very smooth. Lightly oil or spray an 8" skillet. Heat until medium hot, pour scant ¼ c batter into skillet, immediately rotate until thin film covers bottom. Cook until bottom is brown and top begins to form bubbles. Run wide spatula around edge to loosen, turn over and cook other side until light brown. Stack palatschinken with wax paper between until all batter is cooked. To serve, spread each cake with jam, roll up, dust with powdered sugar.
