Halibut Olympia Recipe

Spice Mix:
1 tsp. Black Pepper
1 tsp. Onion Powder
1 tsp. Seasoning Salt
1 tsp. Garlic Powder
1 tsp. dried Basil (use 1 Tbsp. if fresh)
1 tsp. dried Thyme (use 1 Tbsp. if fresh)

½ cup Mayonnaise
½ cup Sour Cream

½ Large Onion, diced
½ Stick of butter

Halibut Filet (1-2 lbs, skin removed)

Bread Crumbs
Parmesan Cheese, grated for topping

Directions:
Directions:
1. Mix the spices together and add the mayonnaise and sour cream. Blend well, and set aside.

2. Preheat oven to 350º

3. Spread the diced onion evenly over the bottom of a 9x11-inch baking dish. Cut up the butter into small cubes and sprinkle evenly over the onions. Microwave for 3-4 minutes to melt the butter and soften the onions.

4. Rinse the halibut filet and pat dry with paper towels. Remove the skin if necessary. Cut the halibut into serving size pieces and place it into the dish on top of the onions.

5. Cover the halibut filets with the spice mixture. Sprinkle bread crumbs over the halibut. Bake in preheated oven for 20 minutes.

6. Remove the halibut and add some grated parmesan cheese to the top of the halibut and return to oven for an additional 10 minutes.

If you have fresh herbs available, it really takes this dish up a notch. The cooking times are approximate, depending on the thickness of your fish. Try not to overcook the halibut. It should be firm, but not dry.
