2 Tbsp minced garlic
Dried hot chili peppers (optional)
Vegetable oil
1 lb diced chicken breast
1/2 - 3/4 C whole cashews
1 bunch of green onion
Salt
Steamed rice

Directions:
Directions:
Heat oil in the skillet until medium-hot. Add minced garlic and stir rapidly to keep from burning. Add dried hot chili peppers if desired. Add the chicken and cook until no longer pink, stirring often. Add a little salt to taste. In the last minutes add in the cashews and green onions and cook for another 1-2 minutes until hot through. Serve over steamed rice. So simple. Feel free to add other veggies: broccoli, carrots, snap peas, red bell pepper, etc. Serve with soy sauce if desired.
