Ingredients: 2¼ lbs Braising beef cut into large bite sized chunks 2 Medium onions thinly sliced 3 Spring onions chopped finely 2 Medium sized potatoes cut into 8 quarter each (optional) 3 Carrots sliced (optional) 4 Sprigs fresh thyme 1 Scotch bonnet chopped finely (remove seeds) 3 Garlic cloves minced 1 tbsp (Level) Smoked paprika ½ tsp Allspice 2 tbsps Worcester sauce 2 tbsps Dark soy sauce 2 tsps Gravy browning 2 Bay leaves 1 tsp Ground black pepper 2 Beef stock cubes 2 tsps Soft brown sugar 14 oz Can of chopped tomatoes Boiling water 1 tbsp Rapeseed oil 1 tbsp Tomato purée 1 tsp Garlic granules 1 tsp Onion granules ½ tsp Sea salt

Directions:1.add the beef to a large bowl then the soy sauce Worcester sauce allspice paprika black pepper garlic garlic and onion granules spring onions onions thyme and scotch bonnet then the browning mix it all together making sure all the beef is coated cover and marinade in fridge for at least 1 hour 2 add the oil to a large pan and heat on medium heat add the beef to the pan and brown 3 add all the marinade and can of tomatoes stir through then add the potatoes carrots stock cubes then just enough water to cover everything stir then add the tomato purée sugar and bay leaves stir then cover pan with lid and cook on medium heat till the beef is tender and sauce has thickened (make sure to keep checking and stirring through cooking to make sure it doesn’t stick to the bottom of pan) add salt to taste |
