1 Tbsp olive oil
1 inch piece fresh ginger, minced
4 cloves garlic, minced
1 medium onion, dice 1⁄2 inch

1 sweet potato peeled or squash, cut into 1/2-inch dice
1 tsp toasted cumin
Salt & Pepper
1 red bell pepper
1/4 tsp crushed red pepper

1 6oz. can tomato paste
1/2 cup natural style or homemade peanut butter *
6 cups vegetable broth
1 bunch collard greens or hearty greens, washed, stems removed, leaves chopped

Garnishes:
1/4 bunch cilantro
4 cups cooked brown rice
1/3 cup chopped peanuts

Directions:
Directions:
1. Sauté onion, ginger, and garlic in a large pot with the olive oil over medium heat for 2-3 minutes until the onion becomes soft and translucent.

2. Add sweet potato or squash cubes, cumin, and red pepper to the pot and continue to sauté for about 5 minutes.

3. Add tomato paste, peanut butter, and vegetable broth to the pot and stir thoroughly. Cover, turn the heat to High, and bring to a boil. Reduce heat and simmer 15-20 minutes, or until sweet potatoes are soft.

4. Cut greens into 1/2-inch wide strips, add to stew and simmer for 5+ minutes, then smash some of sweet potatoes against side of the pot to thicken the stew.

5. Taste stew and adjust seasonings as needed. Serve stew with a scoop of cooked rice (about 3/4 cup), a few chopped peanuts, fresh cilantro, and a drizzle of sriracha.
