1/2 cup mayonnaise
1 tablespoon lemon juice
2 cups chopped cooked chicken meat
1 medium red onion, thinly sliced
1/4 teaspoon ground black pepper
1/2 cup blanched slivered almonds
1 stalk celery chopped

Directions:
Directions:
Place almonds in a frying pan and toast over medium-high heat. Shake frequently and watch carefully as they burn easily. In a medium bowl, mix together mayonnaise, lemon juice and pepper. Toss with chicken almonds and celery.

Personal Notes:
I find that two skinless, boneless frozen breasts poached in water or broth make just about the right amount for this salad. Also the rotisserie chickens you can buy in the deli make this easy to make. The almonds give it a good crunch. 01/11/11
