⅔ cup Superfine Sugar
1 cup Butter at room temperature
1 large Egg Yolk, lightly beaten
2 tsp Lemon Juice
2 tsp Lemon Zest
2 ¼ cups Flour
⅓ cup Butter
4 cups Powdered Sugar
4 Tbsp Lemon Juice
½ Lemon Zest
A little Milk if necessary for consistancy
Directions:
Directions:
Heat oven to 375º. Cream butter and sugar until light and fluffy. Beat in egg yolk, lemon juice, zest and flour until well mixed. Using a 1" scoop, place on parchment lined cookie sheets 2" apart. Using a glass, flour and bottom flatten the dough slightly. Bake 8-10 minutes til edges just begin to brown but are overall light colored. Cool 5 minutes on sheets then remove to racks. For filling cream the butter then beat in powdered sugar and remaining ingredients. Mixture should be thick but smooth. The best way to put filling on cookies is to use a piping bag with a plain tip. Swirl it on a flat side the top with another flat side then dust with powdered sugar.
