6-8 large chicken breasts
1 Tbsp salt
1 tsp poultry seasoning
Paprika
1/2 cup melted butter
1 can beef consommé
1/2 cup sherry
1/2 lb mushrooms
2 – 10 oz cans of artichoke hearts

Season chicken with salt and poultry seasoning. Sprinkle them with paprika to give them a good color. Spread out in roasting pan, skin side up. Baste with combined melted butter and consommé. Bake at 325 degrees in oven for one hour basting every 20 minutes. Add sherry to pan drippings and keep on basting and baking for an additional half hour. Sauté the sliced mushrooms when ready to serve; remove chicken breasts to heated platter and combine drippings in pan with mushrooms and artichoke hearts. Heat thoroughly and pour sauce over chicken.
