¼ lb (1 stick) butter
1 yellow onion, diced fine
1 Tbsp. minced garlic
1 cup flour
1½ quarts water
2 cans (32 oz each) diced tomatoes
½ lb blue cheese
1 to 2 Tbsp. salt
1 tsp. white pepper
1 cup

Sauté butter, onions, and garlic in large stock pot until onions are translucent. Add flour to make roux but be careful not to burn. You want to have a fairly light colored roux. Whisk water into roux until smooth. Add diced tomatoes, bleu cheese, salt and pepper. Start with half the salt and adjust to taste. Bring to a boil and turn off heat. Add cream. Puree soup with a hand blender to desired consistency. We like to make ours as smooth as possible while still leaving some small chunks of bleu cheese.
