4 egg whites (save egg yolks for Amaretto Trifle!)
1 1/4 cups fine granulated sugar (berry sugar)
1 Tbsp cornstarch
1 tsp vinegar

2 cups colourful fresh fruit, sliced (eg: strawberries, kiwi, and blueberries)
1 cup whipping cream
1 Tbsp powdered sugar

Beat egg whites until foamy. Beat in cornstarch and sugar, one tablespoon at a time, until stiff and glossy. Stir in vinegar. Lien the bottom of a baking sheet with brown paper. Draw a circle, 9 inches diameter, onto paper. Spoon meringue into circle and smooth out evenly to edges. Place in a 400º oven and turn off heat. Leave meringue in oven 8 hours, or over night. Invert meringue onto plate and remove paper at serving time. Spoon fruit over meringue and top with whipped cream. Serve to very impressed guests.

It's from New Zealand, but I'd say Pavlova has been well received in North America. Use egg yolks to make Amaretto Trifle!
