3 eggs, slightly beaten
¼ tsp. salt
⅓ cup sugar
2 cups hot milk
½ tsp. vanilla
sprinkle of nutmeg (optional)
1 cup cooked rice
½ cup raisins

Directions:
Directions:
Beat eggs, add sugar and salt. Add milk slowly, then vanilla, rice and raisins. (Immerse baking dish in a pan of hot water to cook.)
Bake in 350ºF oven approximately 45-60 minutes or until inserted knife comes out clean.

Variation: For bread pudding, instead of rice add 2 cups cubed bread and 1 Tbsp. soft butter.
