Ingredients:
Ingredients:
1 box Macaroni (I like large noodles)
1 stick butter
1 cup Milk or 1 can evaporated milk
1-2 cans Campbell's cheddar soup
3 eggs
2 cups grated cheese- Sharp Cheddar Cheese grate yourself, Gouda or Colby- mix 2 kinds of cheeses.
Salt and pepper
Smoked paprika (optional)

Directions:
Directions:
First, you need to have a lot of love and soul. Got that? Okay.

Next, cook macaroni in well-salted water until al dente. Drain.

While your macaroni is cooking, shred your cheeses. (Block cheese is fresher)

Melt the butter and soups in a pot with 1 can of milk or evaporated milk. Add about half the cheese. Stir together. Add salt and pepper to the sauce.

Temper the eggs before adding them to the pot. Crack eggs into a bowl, Add a tablespoon of cheese sauce to eggs- whisk. Add one more tablespoon and whisk. Pour eggs into the cheese sauce and mix together.

Taste cheese sauce to ensure it is seasoned well. (You can also add in other seasonings like onion powder, paprika, a dollop of mustard)

Fill your baking dish halfway full with macaroni. Pour cheese sauce to almost covering noodle top. Try to stay 3/4th full in your dish. (need space so it won't bubble over).

Toss in the rest of the grated cheese leaving a little for the top. Fold together. (Note: not enough sauce makes dry macaroni)

Place remainder cheese on top. Bake till bubbly brown about 45 minutes to an hour depending on how much liquid you have to absorb. It may still giggle a little. It will absorb when it sits. Let the pan sit 10-15 minutes before serving.
