2 large cucumbers
2 Tomatoes
Apple cider vinegar
1 Onion
1 Tab salt
Pepper to taste

Directions:
Directions:
Peel the cucumbers. Slice into a bowl.
Slice Onion in half then slice into the bowl. Slice the tomatoes.
Sprinkle salt and apple cider vinegar over the mixture. Toss.
Refrigerate for at least an hour.
Serve as accompianment.

Growing up, my mom would make cucumber and onion salad every day. A bowl would be sitting on the table for every dinner. Whenever the cucumbers in the garden were at their prime, we'd go and pick-em. Mom would also make pickles with them. I hated pickles. (smile) She'd tell me, ' They are just cucumbers!'. I laugh about that when I think about it. Makes me smile. My mom's cucumber, tomatoes, and onions always tasted the best!
