Big Al's Creole Eggs and Smoked Sausage in Tomato Sauce Recipe

Ingredients: 3 Eggs 1/2 Onion, sliced Large can of Tomato Sauce Tomato paste Smoked Sausage Bread Grits Hot sauce

Directions: |
Directions:Scramble eggs in a bowl and add to pan. Cook till formed and soft. Remove and set aside. Slice smoked sausage link on diagonal. Cook sausage in a pan till a little brown. Remove from pan. Add sliced onions to pan drippings. Add a little oil if needed. Saute till soft. Add a large can of tomato sauce with a spoon of sugar. and a dash of salt and pepper. While the tomato sauce is simmering, cook grits.
Let simmer sauce 15 minutes to cook tomato sauce. Add back sausage and eggs. Simmer 10 more minutes.
Serve with toast, grits, or by itself. Of course, Dad ate it with rice.
Add a dash of hot sauce for heat. |

Notes: Childhood recipe became a childhood favorite. Don't know quite where Dad got this recipe but he had been fixing it for years. It really did not have a name but my eyes would get wide and I'd offer to make the toast when I smelled that tomato sauce blending with the sausage. Whatever he called it, I called it simply, delicious. Savor a little history. I do every time I fix it.
