8 - 10 pretty good sized potatoes
2 cans of evaporated milk
1 medium onion diced
1 stick of butter
3/4 of a block of Velveeta cheese
1 1/2 lbs. of chopped ham

Directions:
Directions:
Peel and slice potatoes. Rinse and layer in a 9 x 13 baking dish with every layer add salt and pepper. Sautee the chopped onion in the butter, once the onions are translucent pour the butter and onions over the potatoes. Add the cubed ham and the cubed Velveeta cheese and mix in with the potatoes and onions. Last pour both cans of evaporated milk in the potatoes. Milk should be to the top of the potatoes. Cover with foil and bake in a 350º oven for 45 minutes. Give the potatoes a stir to mix the milk and cheese together. Then bake uncovered for another 15 minutes.

These are so easy and so delicious! The second day they are even better! I usually make these when I make a ham, I buy one of the 3lb (Farmstead brand or something similar) Cube part of it and slice the rest.
