Casserole:
4 C mashed sweet potatoes
1 C white sugar
2 eggs beaten
½ C milk
½ t salt
⅓ C butter, melted
1 t Vanilla Extract
Optional: Sprinkle of Cinnamon

Topping:
1 C packed brown sugar
½ C all purpose flour
⅓ C butter, melted
1 C chopped pecans

Directions:
Directions:
Cook unpeeled sweet potatoes in pot covered with water until you can stick a for through them. Let cool. Peel potatoes and put into big bowl. With mixer, blend potatoes with first 7 ingredients until combined. Spread into a 9x13 pan. In a smaller bowl, mix all topping ingredients by hand - spread on casserole layer.


Bake in preheated oven at 350º for 35-45 minutes.

This recipe is from my childhood friend, Ashley, who lived down the road. Her mom's sweet potato casserole was always my favorite.
