sausage( deer or andouille)
1 diced onion
1 tbsp oil
1 diced bell pepper
½ c diced celery
¼ c minced garlic
3 cans red beans(2 drained, 1 undrained,pureed)
2½ c broth( can be vegetable or chicken or beef)
½ tsp onion powder
1 tsp dried oregano
2 tsp paprika
1 tsp thyme
¼ tsp black pepper
½ tsp garlic powder
¼ tsp cayenne

Directions:
Directions:
Placed sausage in pan and brown in oil. Add diced vegetables and saute until onions are soft and translucent. Place in crockpot and add dry spices, broth and beans. Allow to cook on low 4-6 hrs. Serve with white rice

I use leftover chicken, chopped up pork loin, and leftover deer sausage for this recipe at times.
