3- 8 oz cream cheese softened
1 tsp vanilla
3 eggs
¾ cup sugar

Directions:
Pre-heat oven 325º.

Mix cream cheese and sugar

Add 1 egg @ a time- blend well

Place cookie of choice in cupcake liner

Add mixture to cupcake liners

Bake 25-30 minutes until almost set (You will see the tops starting to crack)

Allow to cool before placing toppings and then refrigerate

Topping options:
Oreo cookies chopped
Caramel apple dip
Melted chocolate
Pecan

Could use vanilla wafers to line the cupcake liners

You can use pie filling for the toppings.
