Directions:Melt butter in small pot. Add chopped onion and sauté until cooked. Remove from heat and place the onion in a bowl to cool. Dump the can of black beans into the pot. Add the cumin. Stir over medium heat and cook for about 10 minutes until the liquid reduces. Remove from heat. Add the cream cheese to the bowl of onions and stir to combine.Place the cream cheese in the center of an oven-safe dish. Spoon the beans around the cream cheese.Spoon a well into the center of the cream cheese. Pour the raspberry chipotle sauce into the well. Add pepper jack cheese on top.Place in a 450-degree oven, until the cheese melts, and serve with tortilla chips
NOTE: You can make this in advance and pop it in the oven right before serving. Or you can also plate this onto a microwave-safe dish and warm it in the microwave, until the cheese melts. You can also heat up the beans and cream cheese first, then place in a skillet, add the chipotle sauce and cheese and bake until hot (about 10 minutes). |

Notes: Sounds like an odd combination but everyone loves this! I serve this in a cast iron skillet for a little flair!
