Crust:
1 cup butter, melted
1/2 cup granulated white sugar
2 TSP vanilla extract
2 cups flour
Filling:
2 cups granulated white sugar
6 TBSP flour
6 eggs
1 cup lemon juice (about 4 lemons)
2 lemons zest (Optional)
Icing sugar for dusting (Optional)

Directions:
Directions:
1. Preheat oven to 325*F and line a 9 x 13-inch pan with parchment paper, with overhang to help lift out once done.
2. Crust: In a medium bowl, mix the melted butter, white sugar, and vanilla extract until smooth.
3. Add flour and mix until combined. The dough will be thick.
4. Press firmly and evenly into prepared pan.
5. Bake for 21 minutes or until the edges are lightly browned.
6. Remove from the oven and using a fork, poke holes all over the top of the warm crust but not all the way through the crust.
7. Filling: In a large bowl, mix white sugar and flour until combined.
8. Add eggs, lemon juice, and zest. Whisk until combined.
9. Pour filling over warm crust.
10. Bake the bars for 24 minutes or until the center is relatively set and no longer jiggles.
11. Let cool completely at room temperature and refrigerator for 2 more hours.
12. Once cool, lift the parchment paper out of the pan using the overhang on the sides.
13. Dust with icing sugar and cut into squares.
