325g/12oz Soda Bread Flour
400ml/3/4pint Buttermilk
25g/1oz Butter -melted and used to grease the inside of your tin
2xShallot-peeled and finely chopped or 3 Spring Onion- finely chopped
2tsp ESP Very Lazy Red Chillies or 1tbs Sweet Chilli Sauce and 1 Small Chilli-finely chopped
100g/4oz Mature Cheddar - grated
175g/6oz Streaky Bacon - finely chopped
1tbs Course Sea Salt
1x Round 8in Cake Tin - non stick

Pre heat oven 200C/Gas Mk6
You can use Plain Flour instead but you will need the addition of 1tsp Bicarbonate of Soda (sieved in) and 1tsp Salt

Pre cook the bacon for a few minutes in a dessert sponful of oil, then add in the shallots or spring onions and cook for another few minutes until crispy. Remove from pan and allow to cool.

Sift flour and add 3/4 of the cheese. Add bacon and shallot mixture along with chillis

Add chilli sauce to buttermilk and stir to combine.

Add wet ingredients to dry and mix.

Butter the tin and add mixture to it. Add rest of the cheese to the top and sprinkle with corse salt.

Bake for 10 minutes at 200ºc fan and then turn tin and bake for another 10 minutes. Reduce temperature to 180ºc and bake for 20-25 minutes.
