9oz Self Raising Flour
3oz caster sugar
3 oz cornflour
8 oz butter (if using unsalted butter add a good pinch of salt)

Directions:
Directions:
Heat oven to 160 0C and grease a 9x11 rectangle baking tin or round fluted baking tin.

Mix the dry ingredients together in a medium bowl

Melt the butter in a pan or in the microwave.

Add the melted butter to the dry ingredients and mix well together.

Spread the mixture in to a greased tin and prick with a fork all over.

Bake in oven for approx. 30 minutes until the shortbread is golden brown

Remove from oven and cut into squares whilst still hot in the tin.

Sprinkle with caster sugar

Leave to cool then remove from tin and enjoy!

Shortbread will keep well in an airtight tin for 1 week. It also freezes really well for up to 3 months. Place in an airtight container with a sheet of greaseproof paper between each layer
