2 cups plain flour
1 Tbsp cornflour
1/2 tsp baking soda
1/2 tsp salt
1 cup granulated sugar
1 large egg
1 egg yolk
1/3 cup coconut oil, melted
1/2 tsp vanilla extract
1/4 cup freshly squeezed lemon juice
2 tsp lemon zest.
1/2 cup dessicated coconut
1/4 cup icing sugar

Preheat oven to 180 C. Line 2 baking sheets with parchment paper.

In a medium bowl mix flour, cornflower, baking soda, and salt together. Set aside.

In a large bowl, beat together granulated sugar, egg and egg yolk until thickened and paler in colour.

Add melted coconut oil and vanilla; stir well to combine.

Stir in lemon juice and lemon zest.

Stir in flour mixture and mix until just incorporated.

Add coconut and stir until just combined.

Using a cookie scoop (1 tablespoon) scoop dough into balls (or use large spoon and roll between hands).

Roll dough balls in icing sugar then place on prepared baking sheets about 2 inches apart.

Bake for 10-12 minutes, or until middle is set and edges are very light golden brown.
