1 cup raisins
⅔ cup boiling water
1 tsp. cinnamon
1 tsp. instant coffee
½ cup margarine
1 cup white sugar
½ tsp. vanilla
2 eggs
1½ cups flour
½ tsp. baking soda
½ tsp. baking powder
½ tsp. salt
Directions:
Directions:
Pour boiling water over raisins, cinnamon and instant coffee and let cool. Cream the margarine, white sugar and vanilla; add eggs. Sift flour, soda, baking powder and salt and add alternately to the creamed mixture beginning and ending with dry ingredients. Spread onto greased cookie sheet. Bake at 375ºF for 20 minutes.
This can be iced with a caramel icing or served as is.
