MEAT:
¾ pound flank steak

MEAT MARINATE:
2 teaspoons soy sauce
1 tablespoon sherry
½ teaspoon ginger
½ teaspoon sesame oil

Marinate meat for 30 minutes

SAUCE:
1 tablespoon cornstarch
4 tablespoons ketchup[
¾ cup chicken broth
1 tablespoon oyster sauce
½ teaspoon Worcestershire sauce
½ teaspoon sugar

VEGETABLES:
1 bell pepper, julienned
1 onion, julienned
2 stalks celery, thin sliced
2 medium tomatoes, cut into wedges
1 tablespoon brown sugar
1 can pineapple chunks (drain juice into sauce mixture)

NOODLES:
3 packages Chinese chow mien noodles (no substitutes!):

Directions:
1. Partially boil noodles; 3 minutes
2. Drain noodles; spread single layer on greased baking sheets
3. Bake noodles at 400 degrees for 20 minutes, flipping after 10 minutes
4. Stir fry onions and celery with brown sugar; set aside
5. Stir fry beef, add tomatoes and pineapple; set aside
6. Pour sauce mixture into hot wok, stirring until thick and clear
7. Add noodles to sauce mixture
8. Add vegetables
9. Add meat, tomato and pineapple mixture

We couldn't find a decent Chinese restaurant while stationed in New Orleans in 1984, so Bev and I recreated this dish from our childhood memories of tomato beef chow mein.
