Hand Pies:
1 tablespoon vegetable oil
1 small onion, diced (approximately 1 cup)
6 large eggs, beaten
1 teaspoon salt
1 teaspoon pepper
1 can (8 count) Pillsbury Grand biscuits
2 cups sharp cheddar cheese, shredded and divided
6 slices bacon, cooked and crumbled

Seasoned Butter:
1/4 cup (1/2 stick) butter, melted
1/2 teaspoon onion powder
1 teaspoon parsley

Directions:
Directions:
1. In a medium skillet, heat oil over medium heat. Add diced onions and cook until translucent (about 5 minutes).
2. Add lightly beaten eggs. As eggs begin to set, gently pull the eggs across the pan with a spatula. Repeat this process occasionally until no visible liquid egg remains. Remove from heat, season with salt and pepper, and set aside.
3. Remove the biscuits from the can and place them on a clean work surface. Using a rolling pin, flatten each biscuit to about 1/8-inch thickness.
4. Evenly distribute the eggs on top of the flattened biscuits, leaving room around the rim of the circle. Top each with 1/4 cup of shredded cheese and crumbled bacon.
5. To fold the biscuits, wet your finger with water and rub it around the rim of each biscuit. Fold each into a half-moon shape, sealing it. Using a fork, press the edges together to bind the seal.
6. Spray the basket of your air fryer with nonstick cooking spray. Working in batches, place the pockets in the basket. Spray the tops of the pockets with cooking spray.
7. Air fry at 360°F for 5 minutes. Carefully turn over the pockets and air fry for another 4 minutes.
8. As the hand pies are cooking, prepare the butter topping. To make the topping, combine the melted butter with the onion powder and parsley in a small bowl.
9. When ready, use a pair of tongs to remove the hand pies from the air fryer. Brush the melted butter on top of each one. Place the hand pies back into the air fryer to cook one additional minute.
10. Remove the hand pies from the air fryer. Serve with ketchup or salsa.
