2 cups flour
3 tablespoons sugar
1 cup butter (scant)
pinch salt

FILLING
8 egg yolks
1 cup sugar
juice & rind of 1 1/2 lemons
2 envelopes Knox® gelatin
1 cup cold water
8 egg whites
1 cup sugar

Mix like pie crust. Pat in torte tine (spring form) & bake at about 350º F. 8-10 minutes.


Fill with the following:
(see ingredients for filling)

Put [egg yolks, 1 cup sugar, lemon juice and rind] in a double boiler, cook until thick.

Soak 2 envelopes gelatin in 1 cup cold water for a few minutes, then dissolve over boiling water.

Add to the yolk mixture, let cool.

Beat egg whites until stiff, add 1 cup sugar, fold in egg yolk mixture and pour in baked shell.

Set in ice box or cold place several hours.

The paper this recipe was on felt like it was among the oldest recipes. The recipe is on the back, and the front is a form from the BBB/Milwaukee. I have no idea why mom would have a Better Business Bureau complaint for
m!
