Bob's Black Bean Burgers Recipe

1 15-oz. can black beans, rinsed and drained
1/4 c. quinoa (3/4 c. cooked)
1/2 c. water
1/2 c. bread crumbs
1/4 c. minced bell pepper
1/4 c. minced/chopped onion
1 large clove garlic, minced
1 1/2 tsp. ground cumin
1/2 tsp. salt
dash of Tabasco or Louisiana hot sauce (to taste)
1 egg1 T. avocado oil

Directions:

1. Prepare quinoa.

2. Mash black beans roughly with fork, leaving some whole black beans in a paste-like mixture.

3. Sauté bell pepper, onion, and garlic in oil.

4. Mix quinoz, bread crumbs, bell pepper, onion, garlic, cumin, salt, pepper sauce, and egg into the black beans using your hands.

5. Form the black bean mixture into 6 patties, and place on foil lined pan, sprayed with Pam.

7. Bake @ 400º for 15 minutes. Flip and bake 5 more minutes.

This recipe comes from our friend Bob Nolen, with a few adjustments by Sarah. It's a good vegetarian substitute for hamburgers, and really tasty.
