4 Russet potatoes, peeled and cut in chunks - usually about 6 pieces per potato
2T Salt
4T Butter
1/4C Heavy Cream or Whipping Cream

Directions:
Directions:
1. Place the potato chunks in a large pot. Add cold water so that the potatoes are just covered.
2. Add 2 T salt to the potatoes and water
3. Turn on the heat to medium high and boil the potatoes until they are fork tender. Depending on the heat and the number of potatoes - approximately 30 minutes.
4. Drain the potatoes, add butter and cream.
5. Using an electric mixer beat the potatoes, butter and cream - until the mixture looks creamy. Make sure you haven't left any chunks.
