1 can (14-16 oz. ) carrots, drained
1/2 c. sugar
1 stick margarine, melted
1 tsp. baking powder
2 T. flour
3 eggs
1 tsp. vanilla

Directions:
Directions:
Mix all ingredients in blender.

Pour into greased square Pyrex casserole dish.

Bake at 350º 45-50 minutes (until knife comes out clean.)

This is my favorite Piccadilly Cafeteria knock-off recipe. The original recipe calls for twice as much sugar, way too sweet. This is sweet enough to be yummy, but not so sweet that it has to count as dessert.
