1 egg white
1 tsp vanilla
4 cups whole raw almonds
½ cup brown sugar
¼ teaspoon salt
1 ½ teaspoon ground cinnamon - or more for stronger flavor
2 Tbsp melted butter

Directions:
Directions:
Preheat oven to 250 degrees F.
Lightly grease a jellyroll pan or sheet pan with sides.

Lightly beat the egg white; add vanilla, and beat until frothy but not stiff.
Add the nuts, and stir until well coated.
Mix the brown sugar, salt, and cinnamon, and sprinkle over the nuts.
Add the melted butter and toss to coat.
Spread evenly on the prepared pan.

Bake for 1 hour in the preheated oven, stirring every 20 minutes, until golden brown.
Allow to cool, then store nuts in airtight containers.

My daughter loves these. They are warm and spicy and crunchy. Make a great gift in a small cellophane bag with a bow.
