4 salmon fillets
2 onion cut in rings
4 carrots cut in julienne strips
6 t grated fresh ginger
2 T rice vinegar
1 t Dijon mustard
2 T sesame oil
1/2 t salt
1/4 t Pepper

4 squares of foil

Directions:
Prepare for freezing:
Whisk together: ginger, mustard, vinegar, & oil. Coat salmon with oil mixture. Center onion & carrots on foil sheets then top with salmon. Salt & Pepper and drizzle any remaining oil mixture. Wrap and seal foil into packets.

Thaw in refrigerator. Preheat oven to 450º. Bake foil packs 16-20 minutes on cookie sheet or grill for 14-18 minutes.
