1 c uncooked rice
2 1/4 c water, divided
15 bacon slices
1 medium onion, chopped
2 celery ribs, thinly sliced
2 small carrots, thinly sliced
16 oz bag frozen sweet green peas, thawed
1/4 tsp garlic salt
1/4 tsp salt
1/4 tsp ground red pepper
1/4 tsp black pepper

Directions:
Directions:
Bring rice 1/4 tsp salt, and 1 1/2 c water to a boil, cover, reduce heat, and simmer 20 min or until liquid is absorbed.
Cook bacon in a LARGE skillet until crisp; drain bacon, reserving 2 tablespoons drippings in pan. Crumble bacon.
Sauté onion, celery, and carrot in hot drippings over medium-high heat 3 minutes or until tender. Add peas and saute' 3 minutes.
Stir in rice, remaining 1/4 c water, bacon, and seasonings; cook 5 min or until thoroughly heated. Serve immediately. Serves 4
