15/20 medium apple peels and cores
6 c water
2 pkgs dry pectin(low sugar)
4½ c of sugar
1 pkg unflavored gelatin(optional)

Directions:
Directions:
Cook peels and cores in water for 20 to 30 min on med high. Strain through cheesecloth or jelly bag. Add water as needed so you end up with 7 cups of juice
Add pectin and gelatin and bring to a boil. Add sugar, bring back to a boil and boil stirring constantly for 2 min.
Can as usual using sterile jars and lids. Water bath 5 minutes

This jelly is hard to get firm, mine use gets solid in the fridge, hence the gelatin
