1 1/2 C sifted all-purpose flour
1/2 tsp salt
1/2 C shortening
4-5 tbs ice cold water

5-7 tbs ice cold water

Sift flour and salt together. Cut the shortening with a pastry cutter until pieces are the size of small peas. NOTE: for extra tender pastry, cut in half the shortening until like cornmeal, cut in the remainder until like small peas.
sprinkle water over flour mixture. fluff with a fork and mix to form a dough. Flatten and roll out on a lightly floured surface. Divide the double crust recipe in half to roll out two crusts.
For single-crust pie, Roll dough slightly larger than the pan, sold under the edge and flute the edge with fingertips.
tip: try substituting one tbs of the water for 1 tbs white vinegar for lighter crispy crust
