4 chicken breast
salt and pepper to season
2 tsp garlic powder
4 tbsp flour
4 tbsp Romano/pecorino
1/2 c. fresh romano or pecorino cheese grated or shredded
1 onion-chopped
1 1/4 c. chicken stock
1 1/4 c. heavy cream

Slice the breast so that it is flat. Cover with plastic and pound until about 1/2 inch. Season chicken with salt, pepper and garlic.

Combine flour and 4 tbsp of cheese, dredge the chicken and shake off excess. Cook chicken in skillet for about 5 minutes per side. Set aside.

Add oil to the pan and sauté onions until translucent. Add garlic and cook until garlic becomes fragrant, add stock, scraping up bits.

Add heavy cream, bring to a simmer to thickened, add cheese (1/2 fresh), cook until cheese has melted. Add chicken back into sauce, heat another 5 or 6 minutes.
