Marinade: 1/4 c. soy sauce
1/3 c. water
2 tbsp rice wine vinegar
1 tbsp corn starch
1/8 tsp coarse black pepper

Steak
1 lb thinly sliced flank steak-sliced across the grain, diagonally
2 tbsp olive oil
12 mini sweet peppers-thinly sliced
2 scallions, sliced diagonally, keep whites and greens separate
2 tbsp minced ginger
4 garlic cloves, minced

Directions:
Directions:
Put all the marinade ingredients into a ziplock bag. Add steak, seal, massage, refrigerate for at least 15 minutes.

Heat the oil and sauté the peppers, scallions (white), ginger and garlic for 3 minutes, transfer to plate. Add butter to skillet and sauté the steak for 5 or 6 minutes, depending on thickness, transfer to plate. Pour reserved marinade into the pan and simmer until thickened.

Once desired thickness is achieved add in the steak and vegetables, cook for another 4 or 5 minutes until desired temperature.
