Rub:
3 Tbsp Paprika
1 Tbsp Garlic Powder
1 Tbsp brown sugar
1 tsp dry mustard
3 Tbsp coarse salt

1 7-9 lb pork shoulder roast or Boston butt

Directions:
Directions:
Combine ingredients for spice rub and rub all over meat. Refrigerate 1 hour or overnight, covered.

Bake in a covered roaster at 300º for ~5 hours until temp reaches 180º.

Remove meat from pan and let cool

Pull meat using 2 forks

9 lb bone in roast makes about 3.5lbs meat (1/2 steam table pan full)
