2 cups cornmeal
¼ teaspoon baking powder
1¼ teaspoon salt
1 teaspoon sugar
¼ cup evaporated milk or half and half
1-2 cups hot water
vegetable oil

Directions:
Directions:
Combine one tablespoon oil with half and half or evaporated milk, cornmeal, baking powder, salt, and sugar. Pour boiling water into the mixture, stirring until batter consistency of grits. Pour ½ inch cooking oil into a skillet. Heat skillet to medium-high heat. Scoop out about a ¼ cup into skillet and mash flat with fork or spatula. Cook until golden on both sides. Drain on a paper towel. Good with greens.
