chilies (enough for 9x9 pan)
cheese (your choice for stuffing)

Batter:
2 eggs
½ tsp. salt
½ tsp. black pepper
¼ cup flour
¾ cup milk

Directions:
Directions:
Roast peppers on grill. Once blackened on both sides, wrap in foil or place in covered container. Let chiles steam for at least 15 minutes. Peel. Cut off tops and remove seeds. Rinse.
Stuff chiles with cheese and place in casserole dish. Sprinkle fiesta blend cheese on top. May Sprinkle with cayenne for more heat. Bake at 375º for 30 minutes.
