300 gram raw potatoes peeled (or not) (about 3 cups)
300 gram cooked potatoes mashed (about 1¼ cups)
300 gram flour (2⅜ c)
10 gram salt (1.75 tsp)
850 ml milk (3.6 cups)

Directions:
Grate potatoes then place in muslin and squeeze out liquid into a bowl. Let the liquid stand 20 minutes.

Gently pour off the liquid and keep the starch that settled to the bottom of the bowl.

Add the grated potatoes to mashed potatoes and flour. Add starch and salt and mix.

Slowly add 3/4 of the milk to form a batter of pouring consistency. If too heavy add more milk.

Let rest 30 minutes.

Drop a ladle full onto an oiled pan over medium heat. Cook slowly or it will burn. First side is about 2 minutes. Check the color on bottom and adjust the heat. Turn and cook 2 or 3 minutes more.

Best to place in the fridge overnight and use the following day reheated in a pan with good butter.

Boxty is grated potato and flour and mashed potatoes. Mixed with milk it can be made into a batter and cooked on a griddle or without the milk rolled in a log and cut into pieces and dropped in boiling water for about 12 minutes or so and then chilled and reheated/ sauteed with butter in a pan.
