½ lb. fresh crabmeat, drained and flaked, or chopped imitation crab
¼ c. onion, finely chopped
¼ c. green pepper, finely chopped
1 stalk celery, finely chopped
½ c. crushed saltines
3 cloves minced garlic
1 egg, slightly beaten
2 T. mayonnaise
2 T. lemon juice
1 tsp. Dijon mustard
1 T. Worcestershire sauce
1 T. dried parsley
½ c. grated Parmesan cheese
¼ c. melted butter

8 to 10 filets of flounder, orange roughy, basa, or any white fish

Thoroughly combine all ingredients in a large bowl.

Makes enough stuffing for 8 to 10 fish filets.

Season the fish with salt and pepper to taste. Lay flat and place about ¼ cup of stuffing on top of the filet. Roll up and place seam side down in a buttered pie plate or other shallow oven-safe dish. Sprinkle paprika over the top.

Bake at 350º for about 20 minutes, until fish flakes easily with a fork. Sprinkle with fresh parsley and garnish with lemon wedges.
