2 T olive oil
1/2 lb. turkey sausage, casings removed
1 green bell pepper, chopped
1 small yellow onion chopped
1 stalk celery chopped
3 garlic cloves minced
2-3 t Cajun seasonings, depending on your spice preference
3 C cooked red beans or 2 (15 ounce) cans of red beans rinsed and drained.
1/2 C water
1 (15 ounce) can diced tomatoes
2 C cooked long grain white rice

Directions:

Cook rice according to the package instructions. In a large stock pot, heat oil over medium heat. Add the sausage. garlic, peppers, onion, and celery. Break sausage into bite size pieces as it cooks. Stir until sausage is cooked all the way through and vegetables are tender.
Add the seasoning, beans, water, and tomatoes. Mix well with the sausage. Bring to a boil. Reduce and simmer for about 10 minutes. Serve over hot cooked rice.
