1 c plus 2 T buckwheat flour (or 1/2 of another type of flour)
1 T sugar
1 t baking powder
1 t baking soda
1/4 t salt
1 1/4 c buttermilk (can use almond milk and 1 T + 3/4 t vinegar rest 5 min)
3 eggs
1/2 t vanilla
Butter for skillet
Blueberries optional
Maple syrup for serving

Directions:

Mix flour, sugar, baking powder and soda and salt.
In measure cup, add buttermilk. Beat in egg and vanilla.
All at once, add wet ingredients to dry and mix until just combined. Small to med lumps are ok.
Warm skillet or griddle over med-low heat. Brush with 1 1/2 t butter
Give batter a light swirl. 1/4 c batter in skillet. Sprinkle with blueberries if using. Cook 2-3 min until small bubbles form on surface. Flip with 1 in of perimeter is matte instead of glossy. Cook 1-2 min until golden brown.
Keep warm on baking sheet at 200º
Finish pancakes adding more butter as needed.
