Ingredients: Dressing 3 TBSP cider vinegar ⅓ cup oil
Salad 4 carrots, coarsely grated 2 TBSP lime juice 2 tsp poppy seeds 1 ½ cups brown rice - cook according to package instructions 3 green onions - chopped 1 can lentils, rinsed and drained 1 TBSP lemon juice 1 avocado, thinly sliced and lightly drizzled with lemon juice ¼ cup cilantro leaves or microgreens 2 TBSP sesame seeds - toasted ¼ cup pumpkin seeds - toasted 1 tomato - chopped

Directions:In a small bowl combine the vinegar and oil. Season with salt and pepper. Set dressing aside.
In a small bowl mix carrots with poppy seeds and lime juice. In another bowl mix the brown rice with the green onions. In another bowl mix the lentils with lemon juice Put the avocado, the cilantro leaves, the sesame seeds, the pumpkin seeds and the tomatoes in individual bowls.
To serve put rice in the bowls and let everyone choose what they want on top. Drizzle with the dressing. |
