1 lb. crab meat
1 T. minced fresh parsley or 1 tsp. dried
2 slices bread (w/ crust trimmed), crumbled by hand or in processor
1 tsp. mustard
2 T. mayonnaise
1 large egg
salt & pepper to taste

Directions:
Directions:
Combine crab & bread crumbs.
Whisk egg, mayo, and seasonings until smooth.
Add to crab misture & toss lightly with a fork until combined.
Chill for 2 hrs.
Gently form into patties and fry in ½ in. oil in skillet, turning once, until golden.
Serve with lemon wedges and tartar sauce on the side

This recipe was shared with me by a friend from Baltimore. She said she preferred to use soft bread crumbs but some people like crushed saltines, in which case you would need to use about 20 crackers, finely crushed, and increase the mayo to half a cup.
I tried it both ways and I like the bread crumb version best also.

The biggest mistake made by many cooks is trying to add a bunch of other ingredients to the crab. These are simple yet delicious! If you do want spice, just add about half a teaspoon of hot sauce, not so much that you can't taste the crab.

You can make these as an entree' using about a third of a cup of mixture per cake (makes about 8 cakes), or make them in bite size mini cakes (about 24 mini's) as an appetizer.
